1. Cooks arrive at 6:45am

Sign in, WASH YOUR HANDS FOR 20 SECONDS, don a clean apron.

Our usual menu consists of pancakes, breakfast meat, and scrambled eggs.

-Pancakes: Mix up Krusteaz with water and fry with oil as soon as possible. Place on a metal tray in a 325 degree F oven to keep warm and move to the foil-covered hot pads at the first window to serve.

-Breakfast meat: Cooks may need to cook the breakfast meat (this is unusual). If meat has been pre-cooked, heat in 375 degree F oven. Move to the warming tray at the 2nd window for serving.

-Scrambled eggs: crack into large bowls and scramble in electric skillets. Again, start as soon as possible. Move them to the hot water food warmer and large crock pot to be served. Egg shells go in their own separate compost bucket.

-As mentioned, egg shells go into 1 compost bucket. Coffee grounds, filters, and other other fruit/vegetable waste can go into another bucket.

When all guests have been served,
-Turn off:
all ovens
all griddles
light and fan over the griddle

-If you can stay, clean the grill with oil, brick, and paper towels (not dishcloths). Wear the large black gloves under the counter to the right of the stove.
